Hot/sexy/sex worthy male. A guy who you would like to grab, as he goes by, just like you'd grab chinese food at a dim-sum restaurant as it goes by on a cart.
Setting: Street-hot pavement middle of July, sweatiness and skimpy clothing abounds. Characters: You and an amazingly beautiful man who happens to catch you eye. You say "Dim-Sum!" in appreciation of this fact.

Term used to describe yourself if your proficiency in chinese is only conversational as opposed to fluent.
Dim sum refers to chinese brunch and therefore dim sum chinese means one can only speak chinese well enough to make it through an afternoon eating dim sum with fluent chinese speaking family members.
Someone who can only speak dim sum chinese most likely cannot understand most of chinese radio, tv shows or songs.
Very common amongst ABC's (american born chinese)

Hey, I'm kind of nervous about you meeting my parents tomorrow. I feel like they would disapprove of me dating someone who can only speak dim sum chinese.

The volume and loudness level of the surrounding environment in a public setting such as a restaurant. Usually result in irritation after a prolonged attempt to engage in any conversation over a very loud environment.
At the Dim Sum restaurant, it is so crowded and loud in there one cannot hear what their own table is trying to say when engaged in a conversation.
"What did you say? I can't hear you, it's like DIM SUM Volume up in this place"
"it's too quiet here, feels like everyone is eavesdropping into our conversation, let's go somewhere with Dim Sum volume"

At Costco, you push the cart and take and eat the food from the sample stations.
At a dim sum restaurant, they're pushing the cart and they're giving you the food to eat.
