Oxford languages: Noun informal: Zaddy; plural noun: Zaddies. A sexually attractive man, especially an older one who is fashionable or charismatic.
Merriam Webster: With swag. While a daddy is an attractive older man, a Zaddy is a man "with swag" who is attractive and fashionable. It appears that it has less to do with age.
It's believed the word originated from rapper Ty Dolla $ign and his 2016 track “Zaddy”.
Early 21st century: The term Zaddy is gender-neutral.
The Z- as an intensifier, most recently suggested to come from Surreal.
