Nice is a word to define something cool or that makes you pleased. You can also say that someone is nice, that would be a compliment.
*What a nice day* is a sentence to express that you're happy and that you're day is very enjoyable or pleasant.

Self perceived nice guys/girls who expect to be rewarded for the bare minimum. The word is more common in the dating world but can be applied to people who wallow in their self-pity, whining they deserve more than what they were given in life. Usually misguided individuals who experienced many misfortunes.
"Ugh, of course they picked Geoffrey over me at the job listing. They would actually prefer assholes over me!"

Generally, there are two ways this phrase is used. Either it's a synonym for "Why are you telling me this?" as well as "I don't particularly care," or the person who uses it generally considers what they're responding to as, well, 𝘯𝘪𝘤𝘦. Typically, the former is implied more often than the latter. Often, especially over text, it can seem like someone is being sarcastic when they're really not, because, you know, you can't really convey tone over messages.
Why-are-you-telling-me-this-type:
"Ayo! Connor got this new game and it's totally sick!"
"That's nice."
Genuine-type:
"I feel pretty today."
"That's nice."
