The saying comes from the bird of the same name which is a wading bird with a drumming display flight. The phrase “like a snipe” evolved over the next 100 years to mean any number of things that are sneaky i.e. long-range sharp shooters and/or girls on the make, or anyone who takes advantage of others in a either a mean or sneaky way.
