The phrases "I like cheese" is most precisely used to point out a comment that was relevant some time in the past but is not relevant in the current context. It evolved over time to also point out any non-sequitur comment.
This was started during a discussion between two students at Gustavus Adolphus College in St. Peter, MN. The one student (from Minnesota) called the other student (from Wisconsin) a "cheese head". The conversation continued on to other topics and the "cheese head" comment was long forgotten. Several minutes and topics later, the student from Minnesota (likely feeling the pangs of guilt for the forgotten insult) turned to the student from Wisconsin and said, "I'm sorry I called you a cheese head. I like cheese."

Dora: What do you think about the current election year?
Kris: I think that both parties have a lot to be desired.
Jenny: Speaking of parties, there is one tonight at the Kappa's house!
Becky: Cool! Maybe we can get in for free!
Scott: Let's ask Matt!
Travis: I hope Ron Paul wins.
(dramatic pause while everybody looks at Travis)
Matt: I like cheese.
(everybody but Travis): Hahahahaha!

So I heard you like cheese is a commonly-used catchphrase by many people. Many people who use it eventually lose their sanity. It is unknown how it makes people lose their sanity, but there are currently two main possibilities.
1. The word's order somehow makes the brain malfunction until many brain cells die, making the person mentally insane.
2. People who say it are already insane, but insane in a way that makes them say this strange sentence.
People who say it who aren't insane usually say it as a joke, to annoy someone, or they actually want to know.

Person 1: So I heard you like cheese.
Person 2: Yeah, why do you ask?
Person 1: (Brain Malfunctions) Cheese shall rule the world and kill us for eating their children!
Person 2: He's insane.

The act of Logan Paul saying: "I like my cheese drippy bruh" upon comparing Lunchly's so called "drippy cheese" to that of Lunchable's so called "sticky cheese"
"Come in close and look at the queso cheese in Lunchly, versus whatever that is. Drip versus stick. I like my cheese drippy bruh."
