A unicorn are supposed to be an animal extremely unusually rare and beautiful hence when you find a person who has a look or style to them which you normally find a turn off or something your normally just not into at all attractive, that would make them a unicorn and just like with little girl and unicorns in some cases when you find a unicorn due to there rarity and shock factor can cause some people to become obsessed or have delusions of being in love.
You: hey that guy over there with the long hair is unbelievably hot.
Friend: I thought your not into guys with long hair?
You: I'm not. He's just a UNICORN.
Friend: I can tell. You haven't stopped staring at the man since he got here.
Friend: I thought your not into guys with long hair?

Examples would be a woman working well in a typically male job, a man in an unusual or surprising clothes or manner or a person having unusual, godly, fascinating, awe invoking qualities.
The second refers to unicorn as an adjective and describing something such as an event or book that is a rare or unbelievable occurrence. Ideally add references to unicorn stories like: I found it by chance in the woods, it lay it’s head on my lap, it thinks I’m a virgin, I touched its mane, I went on a unicorn hunt.

I was at Burning man and saw a unicorn. She was so inspiring and made me realize I should find my inner balance.
