Colbert was reading the definition of the word marriage from the Merriam-Webster Dictionary and Thesaurus and noticed that they updated the definition of the word marriage to include couples of same sex.

Colbert: "I'm not going to let them "engayify" truthiness the way they did with marriage, drag, bear or manwich."

Refers to a girl who looks like a guy but you are never 100% sure that the person is not actually a guy who looks like a girl.
