cactus eater

People who eat cactus, particularly in Mexican cuisine, consume nopales (tender cactus pads) or tunas (prickly pear fruit). These are common, healthy foods prepared by removing spines, boiling, or grilling the pads, or eating the sweet fruit raw.

In addition, many desert creatures, including javelinas, tortoises, and birds, feed on cactus pads or fruit for nourishment and hydration.

There are works of art including books, songs and poems using “cactus eater” as a title including “The Cactus Eaters” by Dan White and the album “Cactus Eater” by Desert Tree House. Have never heard it used as derogatory, and I am native, myself. Would be news to me. Hope this helps.
The Gila Woodpecker is a well-known cactus eater.
