vinquilibrate

Vinquilibration
The self-perpetuating act of adding more wine to match the remaining cheese on one’s plate, which then requires adding more cheese to match the refreshed wine, and so on. Describes any similarly recursive effort to preserve balance between wine and its accompaniments, such as chocolate or charcuterie.

Etymology: From vin (French for “wine”) + equilibration (“the process of achieving balance”).
"No more wine! You vinquilibrate me so often I never have a chance to finish, and it's too much."
