Vinquilibration
The self-perpetuating act of adding more wine to match the remaining cheese on one’s plate, which then requires adding more cheese to match the refreshed wine, and so on. Describes any similarly recursive effort to preserve balance between wine and its accompaniments, such as chocolate or charcuterie.
