A traditional Cincinnati, OH, food made by Glier's. It's a mixture of pork, beef, oats, and seasonings, packaged into a roll and then fried and served hot. Goetta goes well with just about anything, but it's most commonly served as a breakfast dish alongside eggs, bacon, or pancakes.

Goetta is way to use leftover meats, usually pork, to make a loaf that is sliced and fried like sausage. German immigrants in Cincinnati devised this food in the 1800's. It is now made locally by dozens of butchers each with their own recipe.

The act of folding a paper plate in half and putting it into your mouth funnel style to get the last bits of goetta off the plate. Usually performed at Goetta Fest although socially acceptable anywhere goetta is served on paper plates.
