The term 'Uchiha Brothers' refers to the two brothers, Sasuke and Itachi, from the anime/manga Naruto. Itachi is the older sibling, whilst Sasuke is the younger.
In fanfiction, if the main characters used are Sasuke and Itachi Uchiha, the author may refer to them as the 'Uchiha brothers'.
