A job description used like blue collar and white collar; refers to traditionally female professions like waitressing and nursing that were open to women as they entered the workforce early in the 20th century. Generally the positions do not require much training and are still mostly female.
Barbara Ehrenreich occasionally refers to pink collar work in her book "Bait and Switch."
