Pretentious way to say the 5th flavor humans can identify: savory. Sweet, sour, salty, bitter, savory/umami.

Chef: "the deconstructed steak is a very umami dish"

Customer: "can you not be so pretentious and give me a steak bigger than a baby spoon?"
