A cow that is inside a pit or hole in the ground it cannot escape from, typically in the game Minecraft.
Pitcows were created by the YouTuber Boffy in S1 E1 of his Minecraft hardcore mode series.

Person 1: "I added another pitcow to my pit in my SSP world"
Person 2: "Haha nice"
