the beating refers to the overusing of the "dead horse". Said horse is a metaphor for a joke, and the fact that it's no longer living implies that it's no longer funny

Beating a dead horse is alot loke selling out- you just go a bit overboard with it. If people say you're beating a dead horse, you need to stop what you're doing ad re-evaluate your decisions.
