Partially Broiling chicken or other meats, on very high heat, but leaving it partially uncooked to be cooked to completion in a second step e.g. in a curry, gravy or on lower heat.
My mother made the best Chicken tikka masala, better than any restaurant, by parbroiling the marinated chicken on ultra high heat followed by slow cooking in a gravy.
