Sinuet

Sinuet refers to the fat on meat. This can also include the connective membrane between the fat and the meat itself. It is usually white and can vary in degrees of thickness and density. It is usually the part of the meat that is discarded in trimming.
"Make sure to cut the sinuet off the pork chops before you put them on the grill"

"When you cleaned the rack of lamb, you left some sinuet in the sink."
