A shortening of the phrase "visually graze," to vaze in a restaurant is for a guest to check out other customers' plates, food and drinks, typically before placing an order. Through vazing, you don't have to rely solely on menu descriptions and servers' opinions to make sound ordering decisions.
The description of the lamb sausage dish sounded amazing, but when I vazed the cappellacci with short rib at the table to my right, I knew that was the better pick.
