It can mean two things

1 - A type of hentai or pornography containing or pretaining to shit or crap. Usually really disgusting or disturbing.

2 - To sing/rap complete nonsense, but if done well, can sound fuckin awesome

1 - I saw some scat hentai yesterday and nearly killed myself.

2 - Jason Mraz is a pimp at scatting.
