goetta

Goetta is made by neighborhood butchers in Cincinnati, each with a slightly different recipe.
Goetta is way to use leftover meats, usually pork, to make a loaf that is sliced and fried like sausage. German immigrants in Cincinnati devised this food in the 1800's. It is now made locally by dozens of butchers each with their own recipe.
