There are a few uses for this.
One is to correct spelling (just one *)
One is to finish a sentence (two * after the word)
And one is to Say an action over IM's. (put one before the action and one after)

Correct spelling:
Henry: Idioy
Henry: Idiot*

Finishing a sentence:
Fred: I don't
Fred: Know**

Online action:
Pete: *backs away slowly*
