going "stroganoff" means riding your bicycle (mountain or road) strong, as in beefy & carb-heavy strong.

It's a term used mostly in the bicycling world... Applied when someone surpasses their goals and/or pushes themselves to the next level.
Example 1) "Wow- you went all stroganoff on the last leg of that race man."

Example 2) "I'm gonna go stroganoff at the Colossal Cave Stage Race this weekend. Those bastards are gonna cry."

Example 3) After strength training all winter, I was all stroganoff on that tight, technical single-track."
