Somel is a base spirit distilled from honeywine or mead. The name is derived from Latin roots meaning "only honey". Somel is sometimes referred to as "honey spirit". Containing no residual sugar, somel is typically distilled from only honey. It can be made with additions of fruits, herbs, and spices, but must be at least 51% honey. Somel can be clear or aged and range from 40% to 60% or more alcohol content.
