seitan

Also known as wheat meat or faux beef, seitan is prepared wheat gluten. It has a meaty, chewy texture, and thus is often used as a substitute for chicken or beef in vegetarian dishes.

Seitan is a fat-free, cholesterol-free, animal-free source of protein, and is available in most natural food stores and some of the better supermarkets.
