Italian gravy is a red sauce (not marinara) made with 3 types of meat (usually lamb, pork, and beef.) It has many garden vegetables, and is always made with a small amount of red wine and sugar (to balance the acidity and sweetness.) Normally it is cooked the day before serving it. Letting it sit overnight really enhances the flavor.
