To jump out of one's skin (or more frequently, to almost do so) means to be shocked or scared to the point where it feels like the victim has detached from its own skin and was launched out of it- of course, this never actually happens.
Person 1: Jeez mon', that jumpscare made me almost jump out of my skin!
Person 2: Good god! I almost jumped out of my skin!
Person 3: You scared me bad; I just about jumped out of my skin!
Leader: It was supposed to make someone jump out of one's skin!
Person 2: Oh, well, you did a good job of that.
