It means “Cash is King.” This is usually written on the “tip” line when paying a check, as tipping in cash is usually more financially beneficial to the employee because credit card tips usually get taxed.

Bob: I’ll pay for the tab, but you leave a cash tip.
Sam: Why leave a cash tip when you can just add it to the card?
Bob: because CIK… cash is king.
