amagwinya

A fat cake or fried bread.Dough that is deep fried into a beautiful golden brown colour.
It is some sort of a Xhosa doughnut without the icing on top. It's more savoury and can be had on it's own alternatively stuffed with a variety of meats. The traditional stuffing is polony, thou it can be stuffed with fancier meats like curried mince.

Amagwinya became a popular bread to make during our South African lockdown period.
Amagwinya have been fried into a beautiful golden brown and are ready to be eaten either hot on their own or stuffed with some polony and cheese.

Panlette

A cross between a pancake and an omelette. It's a recipe that Chef Tash (Asithandile Mautla) came up with.

It's made by whisking egg whites till they form soft picks and egg yolks are whisked on their own. A runny pancake batter is made on the side and yolks are added into the pancake batter. The egg whites are then folded into the pancake mixture. The mixture is then cooked in a pan exactly the same way as an omelette until it's done in the middle and golden brown on the outside. It can be served as is, with syrup, fresh berries and fruits or stuffed exactly like an omelette.

It's a fluffy yet bready omelette.
I made panlettes for brunch and I'll be serving them with some fresh berries and cream.
