Sriracha sauce, especially Huy Fong "Rooster" sauce, as seen in your local Pho restaurant. It's basically ketchup made out of hot chili peppers instead of tomatoes. Based on a Thai recipe from Si Racha, Thailand, but made by and used mainly in association with Vietnamese food.
