A taste experience opposite to Umami, imamu is the failure profile of flavor perception first coined by Nicolas Vassiliadis, former pastry chef.

Usually found in imitation products that try to recreate experiences such as plant-based meat or oil-based chocolate, it is the failure of richness that collapses into a hollow, disappointing finish.
“That protein bar is pure imamu.”
“Cadbury Chocolate used to be good but now it's got that imamu taste — hits sweet at first then dies in your mouth.”
“The sauce tries to come across rich, but it ends up imamu and gets less appealing after every bite."
