When you're on a computer and something isn't available to select, sometimes it will appear in greyscale instead of colour to make it more clear that you can't select it. This option is "greyed out."
I had already picked "forest" for my colour scheme, so when I went to change it, "forest" was greyed out because I couldn't select it again.
