Being an apologist for fatness by defending and/or making excuses for fat people. While one can fat knight for either sex, in the wild, it's only ever done for fat women. Often, fat knighting involves shaming thinner women in order to make fat women will feel better about themselves.
Jack: *Whistles* Damn! Look at THAT land whale!
Jim: Hey, c'mon, man! That's not cool! How do you know she doesn't suffer from thyroid disease?
Jack: Oh, STFU, Jim! You're always fat knighting!
