The big cheese is the person who holds the most power in any situation. If you overhear someone at work describe you as "the big cheese," it means that he thinks of you as the most important person in the office.

Man 1: Hey, did you see the big cheese yesterday?
Man 2: No, what did he do?
Man 1: He was screaming at a grilled cheese.
Man 2: Oh, the guy made out of cheese, right?
Man 1: Yes.
Man 2: He's the best person ever.
Man 1: An agreement has been made.
