Derived from the phallic appearance of the yellow tubes carrying riders pulled by a boat that look like giant bananas. Thus a banana boat ride can be a euphemism for sex. Ergo, slang for sex with a Mexican man, usually associated with a tourist in Mexico having sex with a local man on vacation
