Like an amuse bouche, a derange bouche is not ordered from a menu by patrons but rather served free and according to the
chef's selection alone. However, it is served at the end of a large meal, usually
long after anyone wants any more food and only because they are delicious - often chocolate or sweets that are practically coercive. The result is a diner
happy for a moment but riddled with longer-lasting guilt and discomfort for having overeaten. Often styled as petits fours or mignardises.
