the waiter or waitress at fancier restaurants that lurks around with her/his pitcher of water, ready to attack any innocent glasses that seem to be empty to him/her even if they are full to normal people. Water Lurks often result in the customer jumping out of their seat in surprise at the sudden face of a water lurk beside them without warning, causing spillage.
There was a water lurk at the new restaurant in town, she was on the prowl.
